Summer Tomato Salad

Preparation time:

20 minutes

Ingredients:

3 pounds assorted tomatoes (regular size)

3 tablespoons extra-virgin olive oil

3 tablespoons balsalmic vinegar

2 tablespoons chopped, fresh basil

teaspoon salt

teaspoon freshly ground pepper

1 cup yellow or red pear or grape tomatoes

Directions:

Finely dice enough tomato for 1/3 cup.  Place in a jar, add dressing ingredients, shake to mix.  Slice remaining regular-sized tomatoes and arrange on serving platter.  Pour dressing over.  Add pear or grape tomatoes to garnish.

Notes:
