David Dip (refried beans/salsa/corn)

 Large batch

Preparation time:

10 minutes

Ingredients:

2 cans refried beans

1 small jar salsa

1 cup fresh or frozen corn, lightly cooked

1 bunch green onions, sliced with tops (reserve a few)

shredded cheese (cheddar or other)

Directions:

Mix beans, salsa, and corn; spoon into baking dish. Top with shredded cheese. Bake at 350 degrees until hot and cheese is bubbly. Sprinkle with reserved green onions. Serve with black olives, sour cream, etc….dip with taco chips.

This was an impromptu invention of David Jackson – it’s one of our favorites – even if he didn’t recall making it!
