Gramsí Crab Cakes

Preparation time:

30 minutes

Ingredients:

6 ounces lump crab

1 cup bread crumbs

1 small onion, diced

1 small green pepper, diced (may substitute celery)

2 tablespoons mayonnaise (adjust for texture)

1 egg, beaten

1 tablespoon oil or butter

salt and pepper, to taste

Old Bay seasoning to taste

Directions:

Brown onion and green pepper in oil.  Gently mix crab (careful not to break the lumps!), crumbs, egg; add onion/green pepper mixture.  Add seasons and mayonnaise; blend.  Form cakes, fry in small amount of butter or oil.   

Notes:

Yum, yum, yum.  YUM!  Note:  okay to use light mayonnaise and egg substitute.
